It is actually the national dish of Singapore. One pot chicken and rice are very easy and quick to make. This savory dish upholds the great aroma and incredible flavor packed in one pot. Ingredients:
- 8 chicken drumsticks
- 6 dried shiitake mushrooms
- 1 pinch white pepper
- 1 teaspoon Shaoxing rice wine
- 1 stalk of spring onion, chopped
- 1 teaspoon table salt
- 2 slices of ginger, shredded
- 5 cups basmati rice
- 5 tablespoons cooking oil
- 25 cups water
- 1 teaspoon black rice vinegar
- 2-3 spoons light soy sauce
- 1 teaspoon of dark soy sauce
- 1/2 tablespoon corn starch
- 1 tablespoon 5 spice powder
- 1/2 tablespoon sugar
Instructions:
- First of all, re-hydrate the dried mushroom by soaking in cold water for 20 minutes.
- Combine dark and light soy sauce, corn starch, rice wine, sugar, ginger, white pepper powder, and five spice powder.
- Now cut the chicken drumsticks in two pieces and marinade in the mixture along with the mushrooms at least for 20 minutes.
- Rinse rice under the cold water till the water becomes clear then drain the rice.
- Now add rice in an Instant pot, marinated chicken and mushrooms, one teaspoon of salt and 1-1/2 cups of water into an Instant Pot.
- After that close the lid properly and cook on high pressure for nine minutes and then 15 minutes on low pressure.
- Take out the rice in a serving dish and enjoy the delicious Chinese Instant Pot Chicken and Rice. Scoop out the rice in a Chinese style rice bowl.

Instruction is not clear at step 5. Not sure if you are cooking the marinated chicken with the rice or not. A quick video would do the trick. Also, is there a name to this dish?
I think your measurements are off. 5 cups rice, 25 cups water?
